Let’s face it, Thanksgiving stuffing is a star. In a survey, it was the most anticipated dish, and for good reason! It’s one of the best parts of the meal. Why only enjoy it once a year?

After the Thanksgiving feast, the containers come out, and you know what that means: leftovers! But this year, I decided to get creative and create something new. The result? These fantastic stuffing frittata bites.

It’s stuffing, meet the incredible edible egg (and a little heavy cream & spinach). The combination creates a tasty, frittata-like bite, perfect for popping into your mouth one by one. And if your stuffing, like my mom’s, includes sausage, you’re in for a salty, savory treat that’s perfect for any meal – breakfast, lunch, or dinner.

These frittata bites are similar to my previous stuffing muffins, but these are even easier and perfect for using up leftovers. These would also be delicious made with the chestnut stuffing recipe if you’re looking for a different flavor profile.
Forget the traditional frittata? In between meals consider a Thanksgiving breakfast frittata if that fits. Otherwise, these stuffing frittata bites are the way to go!

Ingredients

leftover stuffing -
3
eggs -
3
tablespoons
heavy cream,
or milk -
1/2
cup
loosely packed baby spinach,
finely chopped -
salt & pepper
Instructions

Preheat oven to 400 degrees.

Grease mini muffin tin.

In a small bowl whisk eggs & cream (or milk) together and season with salt & pepper.

Spoon stuffing evenly into 12 tins (should be about 1 tablespoon per tin).

Divide chopped spinach evenly on top of each tin filled with stuffing.

Pour egg mixture on top of each tin until about 3/4 full.

Bake for 15 minutes, broiling for the last 2-3 to brown the tops.
