These Coconut Nut Balls are the perfect on-the-go snack, packed with healthy fats and protein. They’re decadent enough for dessert, yet healthy enough for breakfast.

It’s been too long since I shared a “ball” recipe, and what better time than during a 4-day trip to California? If this work trip had a hashtag, it would be #fueledbyballs.

I’ve got ten of these nutty delights, individually wrapped and ready in my bag for the week. A girl’s gotta have her balls!

Eating healthy on the road can be a challenge.

Trying to eat paleo while traveling is like trying not to be annoyed by the person in the airplane seat behind you using your seat as a punching bag for a six-hour flight.

So far (one day into this trip), I’ve spent $32 at Balducci’s in JFK. I bought a roast beef sandwich and deconstructed it to use the meat on top of a $9 mixed greens salad. Then, I grabbed a fruit bowl for $6, a V8 (I’d never had a genuine, fruit-free, original V8 before yesterday – it was… interesting), and a 10 PM second dinner of a meat, guacamole, and veggie bowl from Chipotle.

It would have been much easier to grab a couple of carb-heavy baguette sandwiches and call it lunch, dinner, and a second dinner, like I usually would. But I’m sticking to this self-imposed challenge for a few more days (all bets are off in Italy later this month!).

Hence, the balls.

Coconut nut bites

These coconut nut balls are paleo-friendly and packed with nuts, coconut, and coconut butter (which my family affectionately calls “coconut crack”). They’re perfect for a quick snack.

They were also made just an hour before discovering the beetle infestation in the pantry.

Thankfully, the beetles seemed to be only in the grain-like stuff, not the nuts. And if I’m wrong about that, they’re chopped up so small from the food processor, I can’t tell, and they happen to taste really good with coconut.

I have a few go-to energy bite recipes, like these oat, almond, and date bites or these peanut butter chocolate chip bites. But these coconut nut balls are now on that list too, thanks to their simplicity and delicious taste!

    raisins,
    or dried cherries soaked in hot water for 5 minutes
