Delicious Roasted Tomato Pita Bread, a perfect end-of-summer snack.

Roasted tomatoes on grilled pita bread make a wonderful end of summer snack, bursting with sweet and savory flavors.

Ingredients

  • 2 pita breads
  • 4 tomatoes, quartered (if they’re bigger, cut into 6 pieces)
  • 3 cloves of garlic, left whole, skin still on
  • Salt & pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • Balsamic vinegar, for drizzling
  • Handful of fresh basil leaves, torn into pieces

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Toss tomatoes with the garlic cloves, olive oil, salt & pepper, and half of the basil in a large bowl.
  3. Spread the tomato mixture evenly onto a baking sheet and roast for about 45 minutes, or until tomatoes are soft and slightly caramelized.
  4. While tomatoes are roasting, grill the pita bread on an outdoor grill or a stovetop grill pan for a few minutes per side until lightly golden with nice grill marks. Cut the pitas into triangles and set aside.
  5. Remove the roasted tomatoes and garlic from the oven and let them cool for a few minutes until they are easy to handle.
  6. Squeeze the softened, roasted garlic out of its skin and gently spread it onto each pita slice. The roasted garlic will be creamy and intensely flavorful.
  7. Spoon 1-2 roasted tomato pieces onto each pita triangle.
  8. Drizzle generously with balsamic vinegar.
