Sun-Kissed Pumpkin Raisin Bagels

Making bagels at home might sound daunting, but it’s surprisingly simple and incredibly rewarding! These delightful pumpkin raisin bagels are truly a revelation, perfect for ushering in the cozy flavors of autumn with every chewy, fragrant bite.

Embrace Autumn Flavors: The Ultimate Homemade Pumpkin Raisin Bagels Recipe

There’s a certain undeniable allure to freshly baked goods, especially when the weather turns crisp and the leaves begin to change. Lately, my kitchen has been a hub of carbohydrate creativity – from comforting cookies and hearty pasta dishes to indulgent donuts. But amongst these delightful distractions, one culinary dream persistently whispered its name: real, authentic homemade bagels. Not just any bagels, but ones that encapsulate the very essence of fall.

Delicious Homemade Pumpkin Raisin Bagels

Creating “real” bagels has always been on my culinary bucket list, a step above the quick 3-ingredient cottage cheese bagels that, while good in their own right, don’t quite capture the same satisfying chew and depth of flavor. This recent surge in my carb cravings felt like the universe’s nudge to finally tackle this long-awaited project. The result? A batch of pumpkin raisin bagels so profoundly delicious, they’ve set a new standard for my breakfast routine.

The Irresistible Allure of Freshly Baked Bagels

The moment these bagels emerged from the oven, their aroma filling the kitchen with warm pumpkin and spice notes, I knew I was onto something special. There was no hesitation; I immediately slathered one with a generous pat of butter, took a bite, and was instantly transported. The chewy texture, the subtle sweetness of pumpkin, the bursts of juicy raisins – it was an experience words simply struggle to describe. Trust me when I say, these bagels are so exceptional that I devoured half a dozen within three days, deliberately skipping the cream cheese to fully appreciate their pure, unadulterated pumpkin flavor. As someone who typically piles on cream cheese like a true New Yorker, that’s a testament to their incredible taste.

Discovering just how simple it is to make such incredible bagels at home has been both exciting and a little terrifying. My mind is already buzzing with countless variations. Imagine a homemade version of Panera’s beloved cinnamon crunch bagel, with that highly addictive sweet topping? Absolutely, it’s happening next! But for now, let’s revel in the perfect balance of chewy, soft texture and rich pumpkin goodness that these pumpkin raisin bagels offer. They are the ideal breakfast to satisfy those seasonal cravings.

Mastering the Art of Homemade Bagels: Tips for Success

Crafting homemade bagels is a journey that, while requiring a bit of time, is incredibly satisfying. The process, from activating the yeast to the final golden bake, is an engaging one that yields truly superior results compared to any store-bought alternative. The key to a perfect bagel lies in several crucial steps: the thorough kneading to develop gluten, allowing adequate rise time, and most importantly, the boiling step before baking. This boiling stage is what gives bagels their characteristic chewy crust and dense, moist interior. The addition of baking soda to the boiling water contributes to that signature golden-brown, slightly glossy exterior.

Don’t be intimidated by the yeast! It’s simpler than you think. Ensuring your water is warm (but not hot!) is vital for yeast activation. Watching it froth is a small but satisfying victory. As you knead the dough, either by hand or with a stand mixer, you’ll feel it transform, becoming smooth and elastic. This is where the magic happens, building the structure that will give your bagels their delightful chew. The smell of the dough rising, infused with pumpkin and spice, is an experience in itself, promising the deliciousness to come.

Shaping the bagels is also a fun part of the process. While you might not get perfectly uniform circles on your first try, remember that homemade charm is part of the appeal. The trick to creating that classic hole without tearing the dough is to gently work it around your thumbs. A wider hole is usually better, as it tends to shrink during boiling and baking. And for an extra touch of golden sheen, consider brushing your boiled bagels with a little melted butter or an egg wash before they go into the hot oven. This not only enhances their appearance but can also add a subtle richness to the crust.

Beyond Breakfast: Creative Ways to Enjoy Your Pumpkin Raisin Bagels

While these pumpkin raisin bagels are undoubtedly a showstopper for breakfast, their versatility extends far beyond. Imagine them toasted and spread with a decadent pumpkin cream cheese, or a simple honey butter for an added layer of sweetness. For a more savory twist, try them with a sprinkle of sea salt and a dollop of almond butter. They also make fantastic bases for open-faced sandwiches, topped with cream cheese, sliced apples, and a sprinkle of cinnamon for a truly autumnal treat.

These bagels are perfect for fall gatherings, brunches, or simply as a comforting snack with your afternoon coffee or tea. They freeze beautifully too, so you can make a large batch and enjoy the taste of homemade goodness whenever the craving strikes. Just thaw, toast, and enjoy! Sharing these handcrafted delights with friends and family is a wonderful way to spread the joy of seasonal baking.

Pumpkin Raisin Bagels - A Fall Breakfast Treat
Making bagels at home is easy! These pumpkin raisin ones are perfect for a fall breakfast.

Ingredients

  • ½ cup raisins
  • 1 package active yeast
  • 1 cup warm water
  • teaspoon sugar
  • ¾ cup pumpkin puree
  • 1 tablespoon molasses
  • teaspoon brown sugar
  • 1 teaspoon salt
  • teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 2 cups all purpose flour
  • 2 cups white whole wheat flour
  • 1 tablespoon baking soda

Instructions

  • Place raisins in a small bowl and cover with enough warm water to plump them. Set aside.
  • Meanwhile, in the bowl of a stand mixer, combine the yeast, warm water, and sugar. Stir gently and let sit until frothy, about 10 minutes.
  • Once the yeast is frothy, add the pumpkin puree, molasses, brown sugar, salt, spices, and drained raisins. Mix with the paddle attachment on low speed until combined.
  • Switch out the paddle attachment for the dough hook on the stand mixer.
  • Add 2 cups of the flour and mix on medium-low speed.
  • Gradually add the remaining 2 cups of flour as the dough mixes.
  • Mix for about 5 minutes. The dough should be relatively firm, not too sticky, and formed into a cohesive ball.
  • Transfer the dough ball to a greased bowl, cover with a towel, and let rise in a warm spot until doubled in size (approximately 1 hour).
  • Once risen, gently punch the dough down on a clean countertop.
  • Divide the dough into 12 equal pieces.
  • Roll each piece into a ball. Flour your thumbs and poke through the center of each ball, working the dough around your thumbs until the center hole is about 1½-2 inches wide. Place the shaped bagels onto a greased baking sheet and cover with a towel. Let them rest for 20-30 minutes.
  • Meanwhile, bring a large pot of water to a rolling boil and preheat your oven to 450 degrees Fahrenheit (230°C).
  • Add the baking soda to the boiling water.
  • Carefully drop 2 bagels at a time into the boiling water, cooking for approximately 30 seconds per side.
  • Remove the boiled bagels with a slotted spoon and place them on another baking sheet that has been greased and lightly dusted with cornmeal.
  • Repeat the boiling process until all bagels have been cooked.
  • Bake the bagels (you may need to use two baking sheets) for 10-12 minutes, or until they turn a beautiful golden brown. For a glossier finish, you can brush them with melted butter or an egg wash before baking.
  • Once out of the oven, transfer the bagels to a cooling rack and let them cool completely before slicing and serving.
