Herbed Cheddar Sausage and Egg Waffle Sandwiches
These mini sausage and egg waffle sandwiches are the perfect breakfast or brinner! Fresh greens, melted cheddar, herbed scrambled eggs

Breakfast for dinner may be one of my most favorite meal mashups of all time. There’s something about the thought of pancakes after 6pm that fills me with a kid-like kind of excitement about dinner that just doesn’t happen when they’re on the table in front of me for breakfast.
It almost feels like cheating but in the best way possible because there’s nothing actually wrong with it AND it makes dinner super simple.

Herbed Cheddar Sausage and Egg Waffle Sandwiches
These mini sausage and egg waffle sandwiches are the perfect breakfast or even brinner! Fresh greens, melted cheddar, herbed scrambled eggs and breakfast sausage make the perfect bite.

Ingredients
- 2 cups preferred waffle mix
- 1/2 cup grated cheddar cheese
- handful baby spinach
- 4 Jones Dairy Farm sausage patties
- 4 eggs
- 1/4 cup milk
- 3 tablespoons chopped fresh herbs (rosemary, sage, thyme)
- 1 tablespoon butter
Instructions
- 1
Prepare the waffles as directed making small sandwich sized portions.

Whisk together the eggs, cheddar, milk and herbs until a medium bowl.

Heat a skillet over a medium flame and add the breakfast sausages. Cook until warmed through if precooked or cook until fully cooked if raw. Remove from the skillet and set aside.

Add butter to the skillet then pour in the egg mixture and cook until scrambled.

Layer the spinach on top of a waffle, then a sausage patty and top with the scrambled eggs. Top with another waffle to create a breakfast sandwich.
