This savory creamy coconut delicata squash soup has a light, subtly sweet undertone that’s the perfect bowl of comfort for a cold fall or winter day.

Ingredients

  • 2 large delicata squash
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 stalks celery, chopped
  • 1/2 head cauliflower florets (optional)
  • 1/2 cup pumpkin puree (optional)
  • 1 tablespoon coriander
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz.) full-fat coconut milk
  • Juice of 1 lime
  • Chopped cilantro, chopped peanuts, red pepper flakes for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with tin foil and grease with cooking spray.
  2. Slice off the ends of each delicata squash. Cut lengthwise and remove the seeds. Place each squash half flesh side down on the baking sheet.
  3. Roast for 30-35 minutes until the flesh is soft. Remove from the oven and let cool a few minutes before scooping the flesh out into a medium bowl.
  4. Heat olive oil in a large, heavy-bottomed soup pot or Dutch oven over medium heat.
  5. Add onions and celery and cook until softened, about 5 minutes.
  6. Add cauliflower (if using), pumpkin puree (if using), coriander, salt, and pepper. Stir and cook for another minute.
  7. Add the scooped-out delicata squash and broth to the pot. Bring to a simmer, cover the pot, and cook for 10-15 minutes until the cauliflower (if used) is fork-tender.
  8. Turn off the heat. Carefully puree the soup using an immersion blender directly in the pot, or transfer the mixture in batches to a standard blender and blend until completely smooth.
  9. Once smooth, return the soup to the pot (if blended in batches). Add the coconut milk and lime juice, stirring until thoroughly combined and heated through.
