Like many others during the sourdough craze, I spent a significant portion of my time experimenting with sourdough baking. After baking countless boules, I finally decided to try my hand at focaccia. Initially, I mistakenly believed it would be much more challenging than regular sourdough bread. However, I quickly discovered that I was wrong, and the result was something I enjoyed even more.

With its incredibly soft crumb, delightful bubbly holes, and wonderfully golden-brown, crunchy edges, focaccia quickly became my favorite bread to bake and enjoy. Plus, there’s a unique satisfaction in creating a bread that requires you to press your fingers into the dough to create those signature dimples. It’s a sensory experience from start to finish!

The idea for these focaccia muffins came from my love for the bread and my desire to create something that was perfectly portioned. This allows me to enjoy focaccia without overindulging and eating half a loaf in one sitting! Another great advantage of making focaccia muffins or rolls is the ability to customize the toppings for each muffin. However, it’s crucial to ensure that whichever flour you choose has at least 12 grams of protein per 100 grams of flour. Speeding Up the Process: A Quick Focaccia Muffin Method

While skipping the long, cold fermentation will result in a more neutral flavor and a slightly less airy texture, the muffins will still be delicious. This is a worthy tradeoff if you are pressed for time and need a quick and satisfying bread option.

There’s absolutely nothing wrong with enjoying a basic focaccia muffin with just high-quality olive oil and a sprinkle of sea salt. However, if you’re feeling adventurous and want to experiment with different flavors, here are some of my favorite topping combinations:

  • Pesto: Any pesto will work beautifully on focaccia. Get creative and try everything from classic basil pesto to more unique variations like arugula pesto or trapanese pesto.
  • Herbs: Rosemary is a classic choice for focaccia, but don’t be afraid to explore other fresh herbs like thyme, sage, oregano, and marjoram.
  • Olives: Make sure your olives are pitted for easy enjoyment. Beyond that, feel free to choose your favorites, such as kalamata olives or Castelvetrano olives.
  • Sun-Dried Tomatoes: These bring a touch of sweetness to the savory focaccia, creating a delightful flavor balance.
