Over the years, I’ve experimented with countless pancake recipes. From basic mixes to elaborate creations, my pancake journey has mirrored my evolving approach to health and wellness. I’ve learned a lot about what works and what doesn’t, especially when it comes to gluten-free and alternative flour options.

In the past, calorie counting dominated my approach, leading to measured, multi-grain pancakes. As I shifted focus to nutrient-dense foods, ingredients like chia seeds, flaxseed, and various flours (oat, almond, coconut, etc.) found their way into my pancake batter. This phase involved considerable experimentation, as deviating from all-purpose flour and standard eggs can lead to unpredictable results.

I’ve also enjoyed creating recipes like oatmeal pumpkin pancakes, apple spice pancakes, cinnamon pear pancakes, pomegranate chocolate chip pancakes and gingerbread pumpkin pancakes. These were all successes during this creative pancake phase.

My “green” spinach pancakes, made for St. Patrick’s Day, finally delivered a gluten-free *and* vegan pancake. It was a victory!

I also dabbled in a “dairy-free” phase, experimenting with chia and flax “eggs.” This taught me the value of a regular egg. While chia seeds are fantastic for things like chia pudding (see my pumpkin chocolate chia pudding, blueberry coconut chia pudding and strawberry guava chia pudding), they can be tricky as an egg substitute in pancakes.

Then there was the paleo craze of 2012—dairy and grain-free—which led to some disappointing pancakes. However, the pumpkin paleo pancakes that emerged from that period remain a favorite and are among my most popular recipes.

Having experimented with the paleo diet for 30 days, I now have a much better understanding of how my body responds to grains, gluten, and dairy. I don’t need to completely eliminate them, but when a gluten-free or grain-free option still tastes great, I often choose it for the benefits it brings.

The surprising part? It took me five years to consider adding quinoa to my pancake recipe! I’ve experimented with protein powder (which led to some amazing recipes like perfect protein pancakes and pumpkin protein pancakes), but quinoa offers a fantastic textural element and a boost of protein that I love.

These pancakes offer a wonderful balance of density and fluffiness. They’re a far cry from thin, lackluster pancakes. The quinoa provides a delightful texture, and the blend of flours really comes together to create the perfect pancake consistency.

And let’s not forget the star of the show: the Meyer lemon. Their milder tartness results in the perfect sweet and lemony flavor profile for these pancakes.
