The carnitas craving is real, and it’s here to stay! I recently made a surprising discovery that led me to create an even better version of my favorite dish.
It turns out that my beloved carnitas pizza recipe, which I’ve whipped up at least ten times, contained a hidden ingredient: corn syrup in the Goya nectar I was using. Talk about a disappointment!
Honestly, when I see “nectar,” I automatically assume fruit. Why would anyone add corn syrup to something already naturally sweet like fruit? It just doesn’t make sense! But hey, that’s a topic for another day…or perhaps a Monday rant.
So, I ditched the Goya and got to work on my own version, completely corn syrup-free. And guess what? I actually like these spicy orange beef carnitas even MORE than the original!
I boosted the flavor profile with fresh orange zest, a more robust spice blend, fresh orange and lime juice, and some chili peppers for a kick. The chuck roast did its magic in the oven for about three hours, emerging incredibly tender with the perfect amount of reduced fruit juice to coat the caramelized, pulled beef.
If you don’t have a chuck roast on hand, you can easily substitute tri-tip for a delicious alternative.
The result? The same amazing sweetness in every bite, but now with a wonderful blend of spice, heat, and all-natural ingredients.
Making great carnitas is surprisingly simple. It’s essentially seasoned meat that’s seared on the stovetop and then simmered in a bit of liquid for a few hours until it falls apart at the touch. This method, known as braising, is the same technique that makes my braised leg of lamb so exceptionally delicious.
