1 lb. wild salmon -
1/4 cup brown sugar -
1 teaspoon salt -
1/2 teaspoon black pepper -
1 1/2 tablespoons extra virgin olive oil, divided -
2 tablespoons dijon mustard -

Instructions

Combine brown sugar, salt & pepper in a shallow dish.

Coat salmon fillet (or fillets if you’ve cut it into 2 pieces) on all sides with the sugar mixture.

Heat a skillet over medium-high heat with 1 tablespoon of the olive oil.
