Buffalo Chicken Broccoli Cheddar Poppers

If there’s one appetizer that perfectly embodies the spirit of a lively gathering, a casual weeknight, or the ultimate game-day feast, these Buffalo Chicken Cheddar Bites are undeniably it. While often associated with cheering on your favorite team, their irresistible combination of spicy buffalo, savory chicken, and melty cheddar makes them a standalone hit, ready to be devoured whether the TV is on or not!

Irresistible Buffalo Chicken Cheddar Bites, perfect for game day or any casual get-together.

When it comes to spectator sports, I confess I’m pretty much a one-trick pony. My heart beats fastest for hockey. There’s something utterly mesmerizing about the speed and skill of players gliding effortlessly across the ice, a stark contrast to my own struggles to simply go straight on skates!

And let’s not forget the unique charm of hockey fights. The spontaneous eruption of a full-blown brawl just because someone dared to get too close to the goalie, followed by a theatrical five-minute “timeout” in the penalty box – it’s hilariously endearing. Honestly, I think they should make them hug it out and apologize afterwards, just for good measure.

The only real downside to my beloved hockey? The Stanley Cup playoffs, as thrilling as they are, don’t quite inspire the same fervent dedication to epic finger foods that the Super Bowl does. It’s almost as if football exists solely to provide a grand stage for culinary masterpieces. In my humble opinion, the food is the one thing football consistently gets absolutely right.

Unleash the Flavor: Why These Buffalo Chicken Cheddar Bites Are a Game-Changer

These isn’t just another appetizer recipe; it’s a culinary secret weapon. Imagine serving up a platter of golden-brown bites, each one bursting with the zesty, tangy kick of classic buffalo sauce, the comforting richness of melted cheddar, and tender shredded chicken. What if I told you that preparing these crowd-pleasers is astonishingly simple? We’re talking about a “dump, roll, and bake” kind of recipe, requiring minimal effort but delivering maximum impact. The sheer ease of preparation makes them a go-to for busy hosts and home cooks who want to impress without being chained to the kitchen.

Beyond their incredible taste and simplicity, these bites offer a fantastic balance. They capture all the beloved flavors of traditional buffalo chicken wings – that fiery, savory goodness – but in a much neater, more manageable bite-sized form. No greasy fingers, no sticky bones, just pure deliciousness. They’re perfect for mingling, easy to eat standing up, and incredibly satisfying. Plus, we’ve even managed to sneak in a touch of wholesome goodness with broccoli and Greek yogurt, making them a “secretly healthy” treat that you can feel good about serving (and eating!).

Crafting Perfection: How to Make Buffalo Chicken Cheddar Bites

The beauty of these savory bites lies in their straightforward assembly. You don’t need to be a gourmet chef to achieve delicious results. The process is designed for ease, allowing you to quickly whip up a batch for unexpected guests or planned celebrations. Let’s gather our ingredients and dive into the simple steps to create these phenomenal buffalo chicken cheddar appetizers.

Essential Ingredients for Your Buffalo Chicken Bites:

Success starts with quality ingredients, but also smart shortcuts! Here’s what you’ll need:

  • Cooked Shredded Chicken: A leftover rotisserie chicken is your best friend here, providing instant flavor and convenience. If you don’t have one, simply boil or bake chicken breasts and shred them. About 1 ½ cups will do.
  • Cooked White Rice: “Sushi” rice is often recommended for its slightly stickier texture, which helps bind the bites together. However, any cooked short-grain white rice will work beautifully. We’ll need about ½ cup.
  • Cooked Finely Chopped Broccoli: Don’t skip this! It adds a touch of vibrant color, essential nutrients, and a subtle earthy flavor that perfectly complements the buffalo. Fresh or frozen broccoli florets, quickly steamed or microwaved until tender-crisp and then finely chopped, are ideal. Aim for ½ cup.
  • Grated Sharp Cheddar Cheese: The star of the show for that irresistible cheesy pull and tangy flavor. Sharp cheddar offers a bolder taste that stands up to the buffalo sauce. You’ll need ¾ cup.
  • Buffalo Sauce: The heart of the flavor! Use your favorite brand. About ⅓ cup should provide the perfect level of heat and tang.
  • An Egg: Acts as a crucial binder, helping all the ingredients hold their shape during baking. One large egg is sufficient.
  • Plain Greek Yogurt: This is a secret weapon for moisture and a hint of tang, while also boosting the protein content. Two tablespoons will add a wonderful creaminess.
  • Almond Meal/Flour: Contributes a delicate nutty flavor and helps bind the mixture without adding too much density. Two tablespoons.
  • Panko Breadcrumbs: For a delightful texture, ensuring our bites achieve a lovely crispness on the outside. ¼ cup will do the trick.
  • Salt & Pepper: To taste, enhancing all the other wonderful flavors.

Step-by-Step Assembly and Baking Instructions:

Follow these simple steps for perfectly formed and deliciously baked bites:

  1. Prepare Your Oven: Begin by preheating your oven to 350°F (175°C). While the oven heats, lightly grease a mini muffin tin with baking spray. This crucial step prevents sticking and ensures easy removal of your delicious bites.
  2. Combine Ingredients: In a large mixing bowl, combine the shredded cooked chicken, cooked white rice, finely chopped cooked broccoli florets, grated sharp cheddar cheese, buffalo sauce, egg, plain Greek yogurt, almond flour/meal, panko breadcrumbs, and a pinch of salt and pepper.
  3. Mix Thoroughly: Using a spatula or your clean hands, mix all the ingredients until they are thoroughly combined. Ensure the buffalo sauce is evenly distributed and that the mixture holds together well.
  4. Form the Bites: Scoop out approximately 1 ½ to 2 tablespoons of the mixture. Roll each portion into a firm, compact ball using your hands. The goal is uniformity for even baking. Place each ball into a cavity of the greased mini muffin tin.
  5. Bake to Golden Perfection: Transfer the muffin tin to the preheated oven. Bake for 15-18 minutes, or until the buffalo chicken cheddar bites are set, golden brown on top, and the cheese is bubbly and melted.
  6. Cool and Remove: Once baked, carefully remove the muffin tin from the oven. Allow the bites to cool in the tin for a few minutes. This cooling period helps them firm up, making them easier to remove. If any cheese has melted and caused sticking, gently use a knife or fork to loosen them from the tin.
  7. Serve Warm: Serve your Buffalo Chicken Cheddar Bites warm, ideally accompanied by a cool and creamy dipping sauce. Garnish with a sprinkle of fresh green onions for a pop of color and freshness.

Crafting the Perfect Dipping Sauce:

No buffalo chicken appetizer is complete without a complementary dipping sauce. Our recommended avocado-lime-Greek yogurt sauce adds a refreshing, creamy counterpoint to the spicy bites.

  • Ripe Avocado: One creamy, ripe avocado provides the luscious base.
  • Lime Juice: The juice of half a lime brightens the flavors and adds a zesty kick.
  • Plain Greek Yogurt: Two tablespoons add extra creaminess and a subtle tang.
  • Salt & Pepper: To season the sauce to perfection.

To make the dipping sauce, simply combine all ingredients in a food processor and blend until smooth and creamy. Adjust seasoning to your liking.

    shredded cooked chicken
  • 1/2
    cup
    cooked white rice,
    “sushi” rice is best
  • 1/2
    cup
    cooked,
    finely chopped broccoli florets
  • 3/4
    cup
    grated sharp cheddar cheese
  • 1/3
    cup
    buffalo sauce
  • 1
    egg
  • 2
    tablespoons
    plain Greek yogurt
  • 2
    tablespoons
    almond flour/meal
  • 1/4
    cup
    panko breadcrumbs
  • salt & pepper,
    to taste

For the Dipping Sauce

  • 1
    ripe avocado
  • juice of 1/2 a lime
  • 2
    tablespoons
    plain Greek yogurt
  • salt & pepper

Instructions

  1. Preheat oven to 350 degrees F (175 C) and generously grease a mini-muffin tin with baking spray to prevent sticking.
  2. In a large, spacious bowl, combine the shredded cooked chicken, cooked white rice, finely chopped cooked broccoli florets, grated sharp cheddar cheese, buffalo sauce, egg, plain Greek yogurt, almond flour/meal, panko breadcrumbs, and season with salt & pepper to taste. Mix all ingredients thoroughly with a spatula until completely incorporated and the mixture holds together.
  3. Scoop out approximately 1 1/2 – 2 tablespoons of the chicken mixture. Roll each portion firmly into a compact ball with clean hands. Place each formed ball into a cavity of the prepared mini-muffin tin, ensuring they are evenly spaced.
  4. Bake in the preheated oven for 15-18 minutes, or until the bites are set, appear golden brown on top, and the cheese is melted and bubbling enticingly.
  5. Carefully remove the muffin tin from the oven. Allow the buffalo chicken cheddar bites to cool in the tin for a few minutes. This resting time helps them firm up. Use a knife or a small fork to gently help pop them out of the tray, as some of the melted cheese may have slightly stuck to the tin.
  6. Serve the buffalo chicken bites warm, freshly out of the oven, with the creamy dipping sauce. Garnish with chopped green onions for added freshness and visual appeal.

For the Dipping Sauce

  1. Combine the ripe avocado, juice of 1/2 a lime, 2 tablespoons of plain Greek yogurt, and salt & pepper to taste in a food processor. Process until the mixture is completely smooth and creamy. Taste and adjust seasoning as needed.
