Ingredients

  • 3 ripe peaches, quartered
  • 1 tablespoon maple sugar, plus more for topping
  • 1 1/2 teaspoons vanilla extract, divided
  • 1 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/3 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 3 tablespoons melted coconut oil

Instructions

  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Toss quartered peaches with 1 tablespoon maple sugar and 1 teaspoon of the vanilla extract in a small bowl. Place peaches on a baking sheet and bake for 15 minutes until softened and starting to caramelize around the edges. Remove from oven and let cool.
  3. Meanwhile, combine the almond flour, coconut flour, baking soda, cinnamon, and salt in a large bowl.
